Position Summary:

Responsible for playing a key role in the daily operations of the kitchen, and providing leadership and direction to the kitchen team, their supervision and training of staff. Ensures that all recipes, food preparation, and presentation meet the Retreat & Conference Center’s high standards/specifications and commitment to quality. Maintains a productive, safe and sanitised kitchen.

Responsibilities

  • Responsible for kitchen operations and and training of staff
  • Transition to the capacity of Executive Chef (Our executive chef is planning her retirement)
  • Prepare cold and hot meals including menu items and banquet/event orders for event/function and buffet dining
  • Assess stations that need additional support and provide any assistance as required
  • Plan menu for buffet meal.  Track most favoured dishes and remove those that are not as popular.
  • Organize workstations and train staff to ensure maximum productivity and efficiency
  • Control food costs by following proper storage procedures, standardized recipes and waste control procedures
  • Assist with inventory – ensure it is adequately maintained and purchases are made in a cost-effective manner
  • Monitor holding and storage operations, stocking and food rotation record inventory and guarantee food service sanitation standards are met
  • Ensure quality and recipe adherence by testing portions, garnishes, temperature, taste and appearance of food
  • Oversee sanitation and hygiene in all kitchen work areas and related equipment. Conduct thorough inspections on a regular basis
  • Maintain the cleanliness and organization of the kitchen area, freezer/fridges, kitchen equipment, counters and storage areas
  • Follow all Health & Safety policies and procedures and sanitation standards
  • Assume the toll in the absence of the Executive Chef

Qualifications

  • 3-5 years with experience in each culinary area
  • Professional culinary training is an asset
  • People management skills with experience training and supervising team members
  • Red Seal Certification, Food Safe Certification
  • Experience in a fast-paced, upscale restaurant
  • Banquet experience is an asset
  • Strong leadership with the ability to delegate, establish work priorities, train and motivate employees
  • Working knowledge and training on all health & safety standards and sanitation standards ie. Food Safe, WHMIS, Health and Safety Policies, food-handling techniques
  • Highly organized with a strong focus and commitment to quality
  • Contribute to a positive work environment and demonstrate a positive attitude
  • Excellent culinary tastes and artistic flair for creating unique recipes and appealing dish presentation
  • Work in an efficient manner while managing multiple tasks and priorities
  • Consultative skills for identifying and communicating continuous improvement opportunities
  • Flexibility to adapt to changing demands
  • Excellent communication and interpersonal skills
  • Ability to build and maintain excellent relationships with diverse people, including kitchen and dining staff
  • Ability to respond quickly to issues and make effective decisions under pressure

Salary: $21 to $25 per hour

  • 10 hour shift
  • 8 hour shift
  • Day shift
  • Evening shift
  • Holidays
  • Monday to Friday
  • Morning shift
  • Overtime
  • Weekend availability

Supplemental pay types:

  • Bonus pay

Ability to commute/relocate:

  • Pinawa, Manitoba: reliably commute or plan to relocate before starting work (required)
  • We have private guest room accomidation available at no cost to our staff and you will be put in our inhouse call schedule.

Experience:

  • Cooking: 4 years (required)
